Using menu design to influence customers and improve sales

 

Menu's are an important piece of restaurant equipment, even if they don't seem like they woult be. They can be a great way to steer customers to satisfying and quality dishes, or daily specials.

Designing an appealing menu is a great way to make a good first impression. If you serve fine dining and have an establishment decked out in chandeliers and wood, but your menu is just a laminated piece of paper, your esteem will immediately fall. On the other hand, a leatherbound menu with detailed descriptions of the meal may be useful for a high class steakhouse, but at a diner it may just get in the way.

There is a lot of psychology in the placement of the meals as well, and putting your best items in the right place could make a big difference in your reputation and profitability. Placing your prime cut of beef right below the appetizers may cause it to be overlooked as people skip the first page to look right at the entrees.

With proper menu design, you'll have a better chance at impressing your customers and investors alike.
