You've stocked up on everything but the kitchen sink

While a commercial range may be the heart of a kitchen, the sink is like the kidney - the role it plays isn't often emphasized, but without it everything would fall apart. A sink helps you keep your kitchen clean and sanitized, and is used for washing everything from dishes to produce.

When it comes to commercial sinks, there are many options. A single compartment sink is often used for washing hands and the occasional knife or dish. A double compartment sink is useful for storing dishes and serving equipment until they can be properly washed - often at the end of the night. You can also find triple and quadruple compartment sinks, for busy operations who need to do it all. If you work with a lot of produce, you can designate a single compartment as a washing and soaking sink, and avoid cross-contamination with dirty dishes. Having a separate mop sink will also help you avoid contamination.

If you're finding yourself having to wash a large amount of dishes by hand each night, you may want to invest in a sink heater. That way, you know you'll always have enough hot water to finish the job.
